Cucumber and Watercress Soup Recipe

The is the perfect soup all year around.

When it’s hot-hot-hot this is a cooling, refreshing, alkalising and energising soup. When it’s cool – you can warm it just slightly to make a warming, filling, soothing soup. Either way it takes minutes to make and is SO alkaline it’s unreal.

Cucumber is a hit. I’ve written about the amazing benefits of cucumbers here, but it also features on my Seven Most Alkaline Foods list, and in the Nine Most Cleansing Foods list here too.

And as for WATERCRESS. Well, in the recent study “The World’s Most Powerhouse Foods” – watercress came TOP! It’s the most nutrient-dense of them all!

I think that’s enough said! Let’s get into the soup:

Alkalising Cucumber and Watercress Soup

Serves Two
Ingredients

1/2 bunch of spring onions, chopped
1 large cucumber, deseeded and chopped
2 bunches of watercress (or as much as you like, to taste, keep adding more and more if you like!)
A large handful of spinach
1¾ pint water yeast free vegetable stock (cooled for the cool version, still warm for the warm version)
(Himalayan) Salt and freshly ground black pepper to taste

Instructions

Chop, slice and dice all of the ingredients and place in a blender. Make the stock by putting a small amount of hot water onto the stock cube or bouillon and once melted, top up with cold water.

Add this to the blender too and then blend it all up!

This cucumber and watercress soup is SUCH a super cleansing, delicious – and fast recipe that everyone always loves!

    I am diabetic and not sure I can have humus. Is that a carb food? I do love the tubs of Humus that Wal- Mart sells. But not sure I should use that to stay alkaline. I am seriously working to lose 22 lbs to get below 200. and to help my heart. Four Atrial Fibrillation is not good so need to clean my arteries. I know Fiber will help but hope to get rid of the heart blockage. Thanks for the soup recipe. Wish I could get the book. Or at least a couple recipes till our fall crop comes in when I hope to get the book.
    Have a treadmill so planning to walk short times till able to do 30 min at one time.. and eventually walk 2 miles to 4 a day. Thanks so much. very grateful for this soup recipe. Hope to find Watercress in Wal-Mart.

    I love watercress but a lot of times I cannot obtain it randomly. What can we substitute for watercress if need be? Thanks Ross.

      Yep – you could. Ideally for something not too strong – arugula/rocket on it’s own could be a little too strong, but an arugula and spinach mix 50:50 would work well.

    Hi Ross have. Discovered I have very high iron levels hemacromatosis so spinach etc is out what can replace that please

    I cannot have any veg from the night shade family. Do I just leave them out or are there alternatives?

    i have looked into and studied lots of varied heal;th guides but have found your explanation on alkaline foods one of the best keep it up and olease don,t escalate the prices there are many a poor customer that would find it difficult to afford regardless of how zealous they may be
